Taste is amazingI love this stuff, makes a perfect sausage flavor for the meat you are making. You can use this to make sausage links, but what I have mostly been doing now is just cooking some ground beef or pork in the skillet and use this to season it. I wish there were a little bit better instructions as to how much to use per lb. I just kinda eyeball and shake it on and have learned from experience what the "right amount" is. One thing I think is pretty cool is that if you're trying to stop eating pork, you can put this on your ground beef and it pretty much tastes just like pork sausage. Great little hack for anyone who abstains from pork for health or religious purposes.5If You Love Sausage, You'll Love this Seasoning!!!This seasoning makes the BEST sausage around. I have used it to season beef, pork & ground turkey, they all taste great. This bag is enough to season 25 pounds of meat, so based off of the total weight of the bag, add 9 grams of seasoning per pound of meat, (for those of you without a scale, that's about 1 tablespoon.) If A.C. Legg's mild seasoning is too mild, try their hot seasoning; if the hot is too hot, try mixing the two together for the level of spiciness you like.5Excellent Flavor!!!Excellent flavor! This tastes as good if not better than a store bought Johnsonville mild italian sausage. My husband and son thought they tasted a little "heat" toward the end of swallowing, but I didn't. I think they just got a particular seasoning or fennel. We processed 2 small boar (roughly 100# each) into sausage. This was first time and the result will have us doing it more frequently. We had to do some calculating as far as the measurements of the seasoning though. We did not process 25# of this flavor, only 10#. So be sure to keep that in mind when seasoning small batches. We will definitely purchase this flavor again and look forward to teying the others.5Makes a Great Snack StickI tried this because the reviews were generally good and I really feel like I got lucky with that decision. I was going to try to come up with my own "mix", but thought that I should try a pre-made one. I'm very satisfied with this and will be using it on my next batch. If you check out the other reviews - one person says it's not salty enough ... another says it's too salty! It's all about what your taste buds tell you.I am going to experiment with using this for a 30# batch - it was just a bit saltier than I would have liked. I'll see how that goes and then I'll have my own "rate" to go by. Some reviews also suggested some red pepper for some heat - great idea if that's what you like. I like various things a bit "hot", but I prefer my snack sticks to be flavorful, but I don't care for any "heat".One warning - Somewhere (the label or maybe the A.C. Legg website) it says to use 7 TBS/5# if you are not going to make a full 25# batch. I found that to be way off it is too little! It should be 11 TBS/5# The best way to do it is to have a small and accurate scale and do it by weight, but the 11 TBS/5# is correct too.5Butcher quality taste. Apply the right process and these meat sticks are awesome!Make these correctly and you will not be disappointed. The only negative comment I received from all of my friends is that they weren't spicy enough. I lied to all of them and said I had them made by a mail order butcher. EVERYONE asked me for the contact info. This seasoning when applied to your correct fat % meat mix in "by weight" quantity makes a perfect, not too spicy but delicious for everyone (even my kids) to eat. You will run out of these very quickly so consider doing a 50lb batch. I used 19mm collagen casings and smoked them low temp until internal was 150f. Awesome taste. Awesome product!!5Best mild sausage season I ve foundEvery year when we grind our sausage we try to find ways to season it so that the kids will actually eat it and we don t end up wasting a bunch of it. This year we purchased this mild season and my family loves it, including the kids!! My daughter gets a package out of the freezer about every other day because she says it s soooooo good. I m very pleased!!5Tasty results!This package will make approximately 25 lbs of snack sticks (raw weight). The blend is very tasty, has a nice peppery finish to it, but is not overly spicy. I made 8lbs of uncased and 4lbs of cased sticks, at 5/8" diameter, and smoked them for approximately 6 hours per batch with hickory chips, which I feel really enhanced the flavor. The only problem I had with the A.C. Legg seasoning kit is the lack of concise directions. I found myself looking online to find more accurate and precise instructions. Other than that small hiccup, I really enjoyed this product and will definitely be reordering in the future.4Made a few small patties to sample before stuffing and the smell was very good while cookingI'm giving this product a 5 but also have nothing else to compare to. First time making sausage links yesterday and bought this based on the Amazon recommendation. Opening the package I smelled more black pepper than anything so was a bit skeptical at first. While mixing into the ground meat I was getting small hints of fennel but again was a bit nervous. I didn't look there was going to be enough based on what I could see in the meat after mixing. Made a few small patties to sample before stuffing and the smell was very good while cooking. The flavor is very nice, mild. There is not the overwhelming fennel taste you get sometimes with store bought. Cooked up a few of the links last night for dinner and they were delicious. The only negative I can give this is the package only had directions for a full 25 pounds of meat and didn't break it down for smaller amounts. No problem, just weighed out what I needed for 5 pounds and it was fine.5Good customer service and productI am very new to sausage making and was reluctant to buy pre-made spices rather than mixing my own. My brother is a veteran sausage maker and suggested the Legg brand. I had some questions about the spice packet (whether a binder was added) Very speedy response from their CSR and more suggestions that were helpful. The resulting smoked sausage is amazing, great flavor, chew and texture. Will buy this again and will try other varieties.5Super ProductThis could be called a one size fits all product but you really have to do some experimenting. For me I found that 2 teaspoons per pound of pork was perfect but like for many, this Jersey boy had to add in some fennel.If you want to make sweet Italian sausage add some sweet basil. Or if you want hot Italian sausage add some hot flakes. There is absolutely no need to buy separate packages. Enjoy!5
