Carob powder is made from the long, bean-like pods of the carob tree (Ceratonia siliqua), a flowering evergreen shrub native to the Mediterranean and northern Africa. Carob is high in dietary fiber, which means that, unlike traditional effects of white flours or sugars, it actually results in feeling fuller for longer periods of time.
